Several years ago a friend of mine invited me to lunch and served these. I have been hooked ever since this is one of our favorite meals. You can add whatever you want to the inside of the tortillas (mine have changed some over the years), but this is how I usually make them. I like to serve them with corn and all the fixings (guacamole, salsa, and sour cream). I hope you enjoy them as much as we do!
8 flour tortillas
1 lb ground turkey
1 can black beans, drained and rinsed
1/2 onion, chopped
2 cloves garlic, minced
1 large can enchilada sauce
Saute the onions and garlic with a little bit of oil. Drain. Add the ground turkey and brown. Add the beans and heat through. Add 1/2 of the sauce the pan and heat until warm. Set aside. In the bottom of a 9×13″ dish, pour a small amount of the enchilada sauce (only enough to coat the bottom). Fill the tortillas with the meat mixture, roll up, and place in the dish. Cover the enchiladas with the rest of the sauce. Sprinkle with Mexican cheese. Cook uncovered for 30 mins at 350F.
This is a really easy recipe. It makes a lot and is great because the leftovers taste just as wonderful!
